Creation & Aging
Creation at Seb Valoir begins long before a bottle is filled.
It begins with intent, the decision to craft Champagne with time, discipline and purpose.
Each cuvée is shaped through a slow and deliberate process:
hand-selected grapes, gentle pressing, cool fermentations, and months of quiet stillness while the wines settle into their character. Nothing is rushed; nothing is left to chance.
Our vintages and emblematic blends rest sur lie for years, gaining depth, texture and quiet strength. Time becomes an ingredient, one that softens edges, builds harmony, and weaves complexity through every layer of aroma.
When the moment is right, each bottle is disgorged and allowed a final rest on natural cork, ensuring balance, clarity and purity before release.

When crafting Seb Valoir champagne, special attention is dedicated to the environment. The HVE label is a guarantee that the natural ecosystem is preserved, and the impact on the environment (soil, water, biodiversity, and more) is minimized.
This includes:
Recycling the woods after pruning.
Planting grass in the vineyard to reduce soil erosion.
Using the technique of mating disruption to reduce the use of pesticide
Naturally protecting the vines against pests trough bio products used in organic farming.
